Pineapple Salsa

Sweet, spicy and fresh, this chargrilled Pineapple Salsa is a perfect addition to a summer BBQ. Delicious with seafood, chips or tacos.

Ingredients

1 fresh pineapple, peeled, cored, and sliced into 1cm pieces
Extra-virgin olive oil, for brushing
1 red onion, halved
4 small tomatoes, chopped
2 capsicums (varying colours), halved
1 avocado, chopped
1 lime, halved
1 chilli, diced (optional)
2 Tablespoons coriander, chopped
Olive Oil
Salt

Method

  1. Preheat BBQ to a medium-high heat.
  2. Prepare the pineapple, red onion and capsicum, and brush with olive oil.
  3. Grill pineapple, red onion, lime and capsicum until charred on both sides, about 5 to 10 minutes.
  4. Allow to cool and chop into bite sized pieces.
  5. Add the avocado, tomatoes and chilli to a medium bowl with the juice of the grilled lime. Add all the remaining charred ingredients to the bowl and gently mix.
  6. Season with salt, garnish with coriander and serve.
